Nothing makes the holidays more perfect than a cup of hot cocoa. There's something about the nostalgia of it that just makes it as blissful of an experience as it is. With colder weather taunting and teasing us, it seemed appropriate to post about hot chocolate to queue the holidays in (since they need a bit of coaxing, wouldn't you say?). It seems January was just a minute ago, now here we are preparing for Halloween, Thanksgiving, and Christmas all over again! Though, I can't say that I'm complaining about it...
Hot chocolate has to be one of my favorite holiday go-to drinks. That and apple cider (is this a hint for a future recipe? Who's to say!). They carry so much flavor, and I feel as though I can slip back into being a young child again where I can put on a hat and a scarf and play in the snow for hours.
Look at me, chatting about snow and winter and autumn has only just begun! Though to me, hot cocoa is appropriate during any cold weather.
Let's not forget about the joy of marshmallows too! If you're fancy like my friend Sara Faith, you have a sweet little Creme Brulee torch you can use to toast mini marshmallows. Though, instructions for regular marshmallow toasting is below (feel free to also use a fire for toasting... *wink*). I like my marshmallows a bit toastier than most people – I just love the stark contrast between the gooey, sweet, fluffy marshmallow and the crispy and toasty flavor on the other side. I wish I had been the first to come up with the idea for toasted marshmallows. It's pure brilliance!
- 1 cup soy or coconut milk
- 1 cup milk
- 2 tbsp honey
- 4 oz white chocolate bar
- 2 tsp Organic Premium Matcha
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- mini marshmallows for serving, toasted if desired
*yields about two cups of hot chocolate
1. Preheat the oven to 350*. Put some foil on a baking tray, along with the marshmallows to toast while making the hot cocoa.
2. Combine the milks, honey, white chocolate, matcha, and salt together in a saucepan over medium – high heat and stir constantly until the chocolate is melted and the mixture is heated through.
3. Turn off the heat and add vanilla extract. Serve immediately with toasted marshmallows.
I have found pure happiness in hot chocolate.
Sweet and earthy with a slight hint of toastiness couldn't make for a more delightful drink in my opinion!
