What is a spritz cookie?
Spritz cookies are similar to shortbread cookies, except they are baked with egg, which allows the cookie to hold its shape. Spritz cookies also don’t crumble like shortbread cookies!
When I searched for the best matcha cookie recipe, I found a lot of tasty looking results, but nothing seemed as good as those spritz cookies my grandma used to bake when I was a kid.
I dug out an old spritz cookie recipe from my grandma and modified it to include matcha! The result is a light shortbread type of cookie that is perfect with a morning cup of tea.
1 Tbsp. + 1 tsp. Matcha Powder
2 ½ Cups Flour
1 Tsp. Baking Powder
1 Cup Margarine
3 oz. Cream Cheese
1 Cup Sugar
1 Tbsp. Lemon Juice
Preheat oven to 375 degrees farenheit.
Mix all ingredients. I recommend mixing the dry products before adding other ingredients.
After all ingredients are thoroughly mixed, chill dough in the refrigerator.
Chill mixed cookie dough in the refrigerator. This is the perfect time to catch up on your favorite Netflix episode!
Place the dough in a cookie press. Following directions for your cookie press, push out desired shapes.
Bake for 8 to 10 minutes until edges are barely browned.
