Matcha Chia Seed Pudding – or better known as Matchia Pudding.

Nothing beats an easy snack in a busy life. I myself am personally very fond of things I can take with me on-the-go, either to work or to play. But most often, making healthy lifestyle choices is the first thing to be sacrificed during the busy seasons of life. Never fear – Matchia Pudding is here! And no health sacrifices are necessary. I took it with me on my commute to work and it made the morning a smidge easier. Make it the night before and you're all set for the next morning, noon or night! I found this while scoping out ways to make the mornings easier, and the Oh How Civilized blog had some great pudding insight!

There is a certain savory-saltiness that really lends itself to this pudding experience. I've grown more fond of savory delicacies the older I get, and the sea salt adds just a hint of wonder. The flavors are so soft and subtle that it is something that most everyone can love.

INGREDIENTS

- 1 cup almond milk/milk of choice

- 3 tbs chia seeds

- 2 tsp honey

- 1/2 tsp matcha + a little extra for topping (I used Ceremonial Matcha)

- A smidge of sea salt (for kicks)

INSTRUCTIONS

1. ) Mix together the almond milk, honey, Ceremonial Matcha, and salt.

2.) In a bowl, pour in the chia seeds and then the almond milk mixture. Stir to coat chia seeds in the liquid, and place in the refrigerator.

3.) Set a timer for 10 minutes. After the timer is up, stir the pudding again to ensure the chia seeds are not clumping together. Keep in the refrigerator for 3 hours or overnight.

4.) Sprinkle some matcha on top to pretty-ify your chia pudding.
