I absolutely love bubble tea and wanted to create my own matcha boba pearls to have with matcha milk tea! These boba pearls are time consuming but all the steps are pretty easy and they add a beautiful flavor to a matcha latte.
Ingredients

2 tablespoons Full Leaf Tea Company Ceremonial Matcha

1 cup (plus more for rolling) tapioca starch

3 tablespoons brown sugar

1 tablespoon honey
Directions
Making the dough
Heat 1/2 cup of water until nearly boiling and add 1 tablespoon of brown sugar. Whisk until combined.
Whisk together the tapioca starch and matcha powder. Pour the water and brown sugar mixture over and stir to combine. Dough should be thick and not sticky.
Rolling the pearls
Lightly dust a clean surface with tapioca starch.
Pinch pea-sized pieces of dough off and roll between hands to create small pearls. Place pearls on the lightly dusted surface to avoid sticking. Repeat until all the dough is gone.
Lightly roll the pearls in the tapioca to ensure all sides are matte and not sticky.
Boiling the pearls
Heat 4 cups of water to a boil and add the pearls while stirring.
Reduce the heat to medium-low and cook for 15-20 minutes stirring occasionally.
Remove from the water and place in a large bowl.
Flavoring the pearls
Add a 1/4 cup of water, 2 tablespoons of brown sugar, and 1 tablespoon of honey to the pearls. Stir gently to combine.
Taste the pearls and add more sugar if desired. Add your boba to a matcha latte for a delicious bubble tea!
