That evening after work, rather conveniently, an ice cream truck rolls by, and I had it: I want to make matcha ice cream with a twist. That twist? Fresh organic raspberries!
So I started working on probably the tastiest treat I've made yet – a matcha and raspberry popsicle. (No surprise as I LOVE ice cream).

Sweet, healthy, organic and cold – learn how to make a DELICIOUS raspberry matcha popsicle! This recipe serves twelve and makes a great party treat!

Ingredients

3 Tbsp. Organic Sweet Matcha Original.

1 Can Unsweetened Organic Full Fat Coconut Milk.

5 Oz. Fresh or Frozen Organic Strawberries.

1/3 Cup Organic Maple Syrup
Directions
Add coconut milk and maple syrup to a blender. Blend until combined and smooth.
Remove 1/2 of the mixture and set aside.
Add raspberries to the remaining mixture in the blender and blend until smooth.
Put raspberry mixture aside and clean blender.
Add matcha and the plain half of the mixture into the blender and blend until smooth.
Alternate pouring the raspberry and matcha mixture into the mold until full.
Freeze for 3 hours or overnight.
Run a little hot water over the popsicle mold to loosen and remove.
