Ingredients
For the Cake:
2 tablespoons Organic Earl Grey De La Creme (loose leaf)
1 cup non-dairy milk
1 cup vegan unsalted butter, softened (miyokos)
1 1/2 cups granulated sugar
4 large eggs, room temperature
2 1/2 cups 1-1 gluten free flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
For Assembly:
1/2 cup apricot jam (or raspberry, if preferred)
1–2 tablespoons water
For Glaze:
- 3 cups of powdered sugar
- 1/4 cup of cooled tea
- 1/2 teaspoon vanilla or orange extract
For Decoration:
- Candied orange peel, edible flowers, dried lavender or blue cornflower petals (can be found in the tea blend)
Directions
Step 1
Infuse the Milk:
Heat milk until just simmering, add Earl Grey De La Creme, cover and steep for 10 minutes. Strain, and cool completely.
Steep Tea for Glaze:
Steep 2 teaspoons of tea in 1/2 cup of water, set aside to cool.
Step 2
Make the Cake:
- Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment.
- Beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Alternate adding dry ingredients and infused milk to the wet mixture, starting and ending with flour.
- Stir in vanilla.
- Spread batter evenly in the pan and bake for 20–25 minutes, or until a toothpick comes out clean.
- Let cool completely.

Prepare Jam:
Warm jam with a tablespoon of water until spreadable.

Layer & Cut:
Once cake is cool, trim edges and cut into two even layers (horizontally). Spread jam over the bottom layer, top with second layer. Press gently.
Freeze for 20–30 minutes for easier cutting. Cut into small squares.

Glaze & Decorate:
Mix powdered sugar, brewed tea and extract until smooth and pourable (add more water as needed). Place cake squares on a wire rack set over a tray. Pour glaze over each square to coat. Let set.
Top each petit four with candied orange, edible flower, or cornflower petal before glaze sets.
