This cake is packed with honey flavor and a mild black tea kick. This would be an incredible accompaniment for a cup of strong, black tea at your next tea party!
Ingredients

3 tablespoons Full Leaf Tea Company Organic Assam Tea

1 cup milk (I used oat milk)

3/4 cup butter (room temperature or softened in the microwave)

1/2 cup white sugar

1/3 cup honey
-
2 eggs
-
1/2 teaspoon vanilla extract

2 cups flour

2 teaspoons baking powder

3 tablespoons honey
-
1/2 cup heavy cream (very cold)

Directions
In small sauce pan, combine the milk and tea leaves and simmer for 5 minutes. Pour into a heat proof container and refrigerate until cold.
*DO NOT SKIP THE FRIDGE OR YOUR BATTER WILL BE RUNNY*
Once your milk is cold, preheat the oven to 350 degrees F.
Cream the butter and sugar until smooth and lighter in color. Add the honey and vanilla extract and whisk thoroughly.
Add the eggs one at a time, beating after each addition until smooth.
In a separate bowl, combine the flour and baking powder.
Strain the cold milk tea into the flour mixture and discard the used tea leaves. Add the butter mixture and fold together until just combined. Do not overmix!
Add the batter into a greased loaf pan and bake for 50-60 minutes. If the top is getting too dark, add a piece of foil on top and continue baking until medium-dark brown and fully baked.
While the cake is cooling, whip the cream in a clean, cold bowl until soft peaks form. Add the honey and whip until fully combined.
Serve the cake slightly warm or chilled with a dollop of whipped cream on top!
