This herbal syrup can be used in many different ways.

  • Add it to lemonade
  • Drizzle over ice cream 
  • Use as a salad dressing base 
  • Substitute maple syrup for the herbal syrup on pancakes (or use both!)
  • Drizzle over shaved ice to make an herbal, naturally flavored snow cone

Looking for a DIY at home caffeine free soda recipe? Try this take on a herbal tea soda  that combines a homemade simple syrup made with Organic Northwest Sunset tea, sparkling water and lemon. This refreshing twist on a traditional soda blends the best flavors of the tea with the sweet and sparkling aspect of soda we all crave. All the best parts of a refreshing soda drink with the added benefits from herbs and without the caffeine crash that accompanies many popular sodas. 


The Organic Northwest Sunset tea is a mix of 6 refreshing herbs:

  • Organic Honeybush
  • Organic Peppermint
  • Organic Spearmint
  • Organic Rosehips
  • Organic Hibiscus
  • Organic Lemon Verbena

Each ingredient working together paired with the bubbly soda water delivers a PNW coastal sunset evening in a cup. The drinks color reflects the vibrancy of golden hour on the coastline, while the cooling mint flavor echos the brisk costal breeze.


This tea blend, inspired by the cool Pacific Northwest evenings is the perfect drink to take you from summer to fall with all the fun of a cold soda made at home.

Ingredients

Syrup:

  • 2 tbsp Organic Northwest Sunset tea
  • ½ cup filtered water
  • ½ cup sugar (or honey for natural version

Soda:

  • 1–2 tbsp herbal syrup (to taste)

  • ¾ cup sparkling water (unsweetened)

  • Juice of ½ lemon or a splash of lemonade (optional)

  • Ice

  • Optional garnish, mint, lemon wheel, or lavender 

Directions

Step 1

Make the syrup 

In a small saucepan, combine tea, water, and sugar.

Step 2

Bring to a simmer, stir until sugar is dissolved.

Step 3

Let steep for 10 minutes , then strain and cool. Store in fridge up to 1 week.

Step 4

Build the Soda

Fill a glass with ice.

Step 5

Add 1–2 tbsp of syrup and lemon juice. Top with sparkling water. Stir gently to mix.

Step 6

Add a garnish of mint, lemon slice or lavender (optional)

Make the recipe your own:
  • Add extra hibiscus for a brighter and more vibrant color.
  • If you prefer a different sweetener, substitute the sugar for honey or agave. 
  • Add lavender for an extra floral taste
  • Blend with ice, lime juice and fruit for a caffeine free herbal blended mocktail.

Can I use a different sweetener for the syrup?

Absolutely! While we recommend organic cane sugar for a classic syrup texture, you can use honey, agave, or maple syrup . Just note that the flavor and consistency may vary slightly, and some natural sweeteners will create a thinner syrup.

How long does the syrup last?

Store the syrup in an airtight container in the refrigerator for up to 7–10 days

Can I make this soda caffeine-free?

It already is! Our Organic Northwest Sunset Tea is 100% caffeine-free , making this herbal soda a perfect option for kids, evening sipping, or anyone avoiding stimulants.

Can I make this a hot drink?

Absolutely! You can use the syrup to flavor a warm beverage or skip the syrup making step and use the  Organic Northwest Sunset tea directly. Steep 1-3 tsps in 8 oz of almost boiling water. Enjoy in its own or with some honey to sweeten.
