Directions
Make the Crust
Preheat the oven to 325 degree F and line an 8x8 baking pan with parchment paper.
In a medium bowl, whisk together the flour, sugar, and salt until well combined. Cut in the butter and vanilla until the dough begins to form.
Press the dough into the prepared baking sheet and spread evenly. Bake for 20-25 minutes or until the edges are lightly browned.
Make the Filling
While the crust bakes, prepare the filling. Steep the tea leaves for 5-7 minutes and set aside.
Zest the lemon until 1 tablespoon of lemon zest is acquired. Squeeze the juice until you have ¼ cup of lemon juice.
Combine the flour and sugar in a medium bowl and whisk to combine. Add the eggs and whisk until smooth.
Add the lemon zest, vanilla, lemon juice, and steeped tea (discarding the tea leaves) into the mixture and whisk well.
Pour the filling on top of the baked crust and bake for an additional 25 minutes or until the edges begin to caramelize and the middle doesn’t jiggle.
Let cool to room temperature and then chill in the fridge. Dust with powdered sugar before serving and enjoy!
