These cute little cookies have a similar texture to Russian Tea Cakes but with a matcha and lemon kick of flavor!
Ingredients

1/2 cup powdered sugar (plus extra for rolling cookies in)

7 tablespoons butter

zest of 1 lemon
-
2 tablespoons lemon juice
-
2 tablespoons Full Leaf Tea Company Culinary Matcha

1 cup AP flour

1 tablespoon cornstarch
Directions
Soften the butter in the microwave until soft but not fully melted. Whisk the powdered sugar into the softened butter until smooth.
Add the lemon juice, lemon zest, and matcha into the butter mixture and whisk well.
In a separate bowl, mix the flour and cornstarch.
Combine the two bowls into one and fold together to make a dough.
Roll the dough into small balls (approx. 2 tablespoons) and place 1-2 inches apart on a cookie sheet. Refrigerate for 1 hour.
Preheat the oven to 350 degrees F and bake the cookies for 15-17 minutes or until the bottoms are slightly browned.
Let the cookies cool for 15-20 minutes until just slightly warm and roll in powdered sugar. Enjoy!
