These muffins are beautifully fluffy, packed with flavor, and have a light caffeine-kick from the matcha! What more could you want for a simple breakfast?
Ingredients

3/4 cup all purpose flour

1 tablespoon Organic Culinary Matcha

1/2 teaspoon baking powder

1/2 teaspoon baking soda

2 overripe bananas
-
3 tablespoons melted butter or coconut oil

1/4 cup milk
-
1/3 cup dark brown sugar

1 egg
-
1/2 cup chopped maple-glazed walnuts (optional, could switch out for plain walnuts or any other nuts)
Directions
Preheat the oven to 350 degrees farhenheiht.
Whisk together the flour, matcha, baking powder, and baking soda in a large bowl.
Mash the bananas in a small bowl and add the melted butter, egg, milk, and sugar. Mix thoroughly.
Add the wet ingredients to the dry ingredients and mix together with a spatula.
Finely chop the walnuts (if using) and add to the batter. Stir in until well-combined.
Split the batter between 6 muffin cups and baking for 15-20 minutes, checking often in the last 5 minutes. Once they are golden brown and cracked slightly on top, check with a toothpick to make sure they are fully baked and allow to cool on a rack. Enjoy!
