Cookie in a cup is a great way to indulge in a dessert without the guilt. It’s a single serving, it’s decadent, and best of all, it’s one dish to clean! Having pulled many an all-night study session, this was a perfect pick me up to keep me going. The matcha gives energy and boosts your metabolism.

This is one of the easiest things you could start out making. All it requires, is a microwave, a cup, and some measuring implements. I don’t recommend doubling this batch though, unless you’re a fan of raw cookie dough in the middle of your mug.
Melt butter in a cup (approximately 20-30 seconds in the microwave)
Add Organic Premium Matcha, Sugar,Vanilla, and Salt, stirring with a fork to combine.
Separate egg yolks from whites.
Stir in egg yolks until combined.
Add flour and mix until combined.
Add chocolate chips, then mix until combined.
Microwave for 40 seconds to finish. (if it doesn’t look right, continue for 10 seconds at a time, but note the egg yolk is going to make it shiny – shiny doesn’t mean uncooked).
Enjoy!
Recipe Note
I’ve always been intimidated by separating egg yolks from egg whites. But, pro tip: if you crack the egg in half on a flat surface, then slowly separate it, the white will fall away and you can catch the yolk in half of the shell. Also, if you’re looking for a little protein boost – you can cook the egg whites separately for a savory snack to go with the sweet.
