Spiderweb Matcha Crepes

These matcha crepes are perfect for Halloween but you could leave out the spider web steps and create some beautiful plain matcha crepes for any occasion!
Ingredients

2 large eggs

1/2 cup milk

1/4 cup melted butter

1 tsp vanilla extract

2 tablespoons sugar

9 tablespoons flour (divided)

2 tablespoons water

1 tablespoon Full Leaf Tea Company Premium Matcha

Black food coloring
-
1/2 cup heavy whipping cream

1/4 cup powdered sugar
-
1 teaspoon vanilla extract
-
1/2 cup fresh raspberries or other fruit

Directions
Making the crepes
Whisk the eggs and milk in a large bowl and slowly pour the melted butter in while continuing to whisk.
Whisk in the sugar, vanilla extract, and 8 tablespoons of flour until well combined.
Refridgerate for 30 minutes.
Remove 1/2 cup of batter into a separate bowl. Whisk 1 tablespoon of flour into the 1/2 cup of batter and add black food coloring until desired color is achieved. Pour this batter into a piping bag or Ziplock bag and cut a very small hole in one corner.
Add the water and matcha into the plain batter and whisk until smooth. Add additional water one tablespoon at a time until a thin pancake batter consistency is achieved.
Preheat a pan with a little cooking spray or butter over low-medium heat.
Working quickly, pipe a spider web pattern with the black batter and then pour 1/4 cup of matcha batter over the top. Swirl the batter into a thin pancake and allow to cook for 2-4 minutes or just until the edges begin the lift.
Flip the crepe and allow to cook for an additional 2-4 minutes or until very lightly golden on each side.
Continue with the rest of the batter until all is used up.
Making the filling
In a cold, dry bowl, whisk the heavy whipping cream until soft peaks form.
Add the sugar and vanilla and whisk until smooth. Put in the fridge until ready for use.
Assembly
Take a crepe and put it face down on the plate.
Pipe or spoon the filling onto 1/4 of the crepe and add berries on top of the filling.
Fold the crepe into quarters and serve with powdered sugar, additional filling, berries, or syrup. Enjoy!
